TN: 1. This is a pretty good Chinese dish. Here is a Recipe for it I found online. Basically, the Shaoxing wine gets rid of the usual "bloody" taste that meat has in it. The soy sauce sweetens it with that Umami-like flavor. It goes really well with rice, and it's usually simmered to have a thick sauce to it that goes really well with rice. The general cooking method can also be used on Beef Shank cuts, I believe, and it ends up being a really soft cut of beef that is both juicy, and textured in such a way that it is absolutely satisfying to eat. But yeah, as with Cantonese cuisine, it can turn out to be a little "greasy" for some of the more health-conscientious diners, and it is probably heavier than most Shandong cuisine which is probably what most people would consider "mainstream" Chinese cuisine. Though that's kind of a deeper topic, and that last statement is not 100% correct, since there are strong regional differences between the various Chinese provinces, which kind of warrants its own discussion.
